本セッションでは、アンケート(主観評価)では捉えきれない食品の微細な体感効果を客観化する「脳波×自律神経のマルチモーダル解析技術」を紹介します。食品の機能性評価において、VAS等の主観指標はプラセボやノイズの影響を受けやすい課題があります。本発表では、中枢神経(脳波)と末梢神経(心拍変動)を同時に測定・解析するアプローチを取り上げ、双方の生体信号を組み合わせることで見えてくる評価事例を解説します。聴講により、主観評価に依存しない客観的エビデンスの構築手法や、試験プロトコル設計に役立つ技術知見を得ることができます。
This session introduces multimodal analysis technology combining EEG and autonomic nervous system measurements to objectify subtle sensory effects of foods that surveys (subjective evaluations) cannot capture. In evaluating food functionality, subjective metrics such as VAS are often susceptible to placebo effects and noise. This presentation highlights an approach that simultaneously measures and analyzes the central nervous system (EEG) and peripheral nervous system (heart rate variability), explaining evaluation case studies revealed by combining both biological signals. Attendees will gain technical insights useful for protocol design and methods for establishing objective evidence independent of subjective evaluations.
